  • Difficulty in Bearing Weight: A large number of individuals with knee pain report difficulty bearing weight on the affected knee. This is often described as a feeling of weakness or instability, making activities such as climbing stairs or even simple walking difficult.

Spring Is Running Season! Are You In Your Best Shape?

Runners are often misled into believing unproven solutions to avoiding pain and injury. Not many people know that the number-one risk factor for runners to sustain an injury is having had an injury in the last 12 months.

The other most common risk factors are:

  • Running experience of 0–2 years
  • Restarting running after extended rest
  • Overtraining (i.e., more than 40 miles per week)

Double Thick Spiced Rubbed Pork Chops

These double thick spiced rubbed pork chops are bursting with flavor – you won’t even miss the apple sauce! My grandmother would make me pork chops and apple sauce for dinner when I stayed over at her house. I thought they were the best, but these are so good on their own. I will share two techniques to keep your pork chops juicy and tender. 

 First, I start with a pork loin roast, cut into double thick chops. I French the bone (remove the meat between the bones) for presentation and trim away the second bone. 

 Next, I prepare a brine by dissolving 6 tbsp of Kosher salt, ¼ cup brown sugar, and 1 teaspoon Prague powder in 1 quart of hot water. I also add 1 teaspoon of black peppercorns, allspice berries, and cloves. Once all ingredients are incorporated I whisk 1 quart of cold water and let it cool. The pork chops soak in this brine in a resealable bag for 12 hours in the refrigerator. Brining the pork chops will keep them from drying out. 

 I made a spice rub by combining one tablespoon of each: ground allspice, smoked paprika, brown sugar, ancho chili powder, chipotle chili powder, cherry powder, kosher salt, and 1 teaspoon of nutmeg and cinnamon. 

 After brining, I rinse and dry the pork chops, then air-dry them in the refrigerator for 3 hours. Before grilling, I drizzle them with olive oil and generously apply the spice rub.

 I set up a charcoal grill for smoking and preheated it to 225-250°F (or use a gas grill set up for indirect grilling and use the smoker box and wood chips to create wood smoke). The pork chops smoke directly on the rack until they reach 125°F internally on an instant read thermometer, which takes about an hour depending on the size of your pork chops. 

Then, I crank up the grill to medium-high for direct grilling. After brushing the grate with oil, I sear the chops for 2-3 minutes per side until they’re browned and sizzling and reach 145-150°F internally. Remember that the temperature will rise as they rest.

The process of smoking and then searing is called reverse-searing. It is a great way to create an even cook on a thick cut of meat without it burning the outside while waiting for the inside of the meat to reach a safe temperature. It is an optional step, but I basted the pork chops with spicy apple barbecue sauce at the end of the cooking. I served the pork chops with grilled broccolini. 

The spice rub and the heat of the charcoal grill created a delicious crust on the pork chop. The spicy apple barbecue sauce added a subtle sweetness and heat to the pork chop. The inside was succulent and tender. The grilled broccolini paired nicely with the spice rubbed pork chops. Enjoy!
