July 4th Celebrations: Prioritize Health and Safety
July brings 4th of July celebrations, and while enjoying fireworks and picnics, it’s essential to prioritize safety. Here are some expert tips from Nestor Physical Therapy:

- Firework Safety: If you plan to handle fireworks, follow safety guidelines strictly. Mishandling can lead to burns and accidents.
- Healthy Picnic Choices: Choose nutritious picnic options like salads, grilled veggies, and lean proteins. Limit sugary drinks and snacks that can lead to energy crashes.
- Mind Your Posture: Whether watching fireworks or dining at a picnic, maintain good posture to prevent back and neck strain. Sit upright and use cushions for support if needed.
By focusing on safety and making healthy choices, you can have a memorable and healthy 4th of July celebration!

Saucy Ribs and Wings
To sauce or not to sauce is the question. Do you sauce your ribs or chicken wings? I must admit I typically do not put sauce on my ribs or wings, but lots of people do. If you are going to put sauce on your ribs or wings when you apply the sauce matters.
If you sauce your wings or ribs too early the sauce can burn before your food is cooked. Most barbecue sauces contain sugar, and the sugar will burn at high temperatures. Higher temperatures are required to get a crispy chicken wing. If you sauce your ribs too early, they will not develop the bark on the outside that creates flavor and texture to ribs. In both cases it is a balancing act.
I was recently sent a barbecue sauce to trial and figured it would be great on wings and ribs. The sauce was mustard and brown sugar based. Here is how I was able to incorporate the sauce without it burning the ribs or wings.
The wings were seasoned with my homemade barbecue rub and left to air-dry in the refrigerator for a few hours. While the wings set-up in the refrigerator I prepared the ribs. I started by removing the membrane from the back of the ribs. I lightly rubbed the ribs with yellow mustard as a binder to help the rub stick. Next, I generously seasoned the ribs with my homemade barbecue rub. I set-up my Big Green Egg XL (BGE) for indirect grilling and heated it to 250 degrees. I added a few wood chunks to create wood smoke. The ribs smoked at 250 degrees for one and half hours. Now that the ribs had developed a nice bark, it was time to sauce the ribs.
I basted the ribs with warmed sauce and wrapped the ribs in aluminum foil, and they went for another forty-five minutes. I opened the foil and opened the vents on the BGE to achieve a temperature of 375 degrees to caramelize the sauce on the ribs. I loosely rewrapped the ribs in the foil and let them rest while the wings cooked.
To cook the wings I increased the temperature of the BGE to 400 degrees. The wings smoke-roasted for 25 minutes and then I sprayed them with a combination of apple cider vinegar and barbecue sauce. The wings went for fifteen more minutes. Once the wings started to crisp up, I painted them with warm barbecue sauce. Once the wings were glazed and sticky, I removed the wings from the BGE. I added the sauce at the end, so the sauce does not burn on the wings.
Pro Tip: Warm your sauce before applying it to your food for two reasons. First, applying cold sauce to hot food does not make sense. Second, cold sauce will create streaks on your food, and it looks amateurish. Remember you eat with your eyes!
The sauce became one with the ribs by wrapping them in the foil. The final blast of heat created a sticky and glazed exterior. The ribs were smoky and tender but did not fall off the bone. I prefer my ribs to have some bite. The ribs were tangy and sweet due to the mustard and brown sugar in the sauce. The sauce was balanced and not overly sweet. The sauce on the wings did not disappoint. I enjoyed the contrast of texture in the wings created by the sauce. The wings were crispy, caramelized, sticky on the exterior and the juicy and tender inside.
